I made the olive oil mayo. It is easy and the taste is great. The first batch I made I thought had too much vinegar but...I didn't add as much vinegar to the second batch. I liked the first batch better. Still very good food.
The 3rd and 4th batches came out edible but a little too strong olive oil taste. I have used different brands of olive oil for each batch. The next batch I make is going to be from avocado oil and a little olive oil.
The avocado oil mixture was fair. Avocado oil alone is very good. I also reduced the white pepper, dry mustard and paprika to 1/4 tsp to 1 cup oil and 2 egg yolks.
